After completing his studies at the School of Hospitality and Tourism of Madrid, David Arauz began his professional career at the Arce restaurant. Despite his youth, this commis discovers his true passion: the Japanese cuisine, something that from this episode, it will mark his life at all levels, personally and professionally. His numerous trips to Japan open up new culinary and cultural horizons and perfect his training in a culinary art that begins to develop in the Suntory chain by the hand of the Japanese chef Kenjiro Sato. Then he continues his professional career in other renowned restaurants such as Yashima, in Barcelona, or Kazan, in Santa Cruz de Tenerife.
But his consecration as an expert in Japanese gastronomy took place in 2010, when he joined the management team of Grupo Bambú, owners of the well-known restaurants 99 SUSHI BAR. Since then, the professional growth of David Arauz has been linked to this managing company, which in March 2018 has again revolutionized the world of Japanese cuisine in Spain with the opening of 99 KŌ SUSHI BAR, an ambitious project from whom Chef Arauz is director and executive chef.
99 KŌ SUSHI BAR is the result of a deep exploration and a constant work in search of excellence. A unique limited space where diners will taste exclusive products brought from different parts of the world where David Arauz will explore this new and surprising concept of Japanese haute cuisine.
